chocolate cookie peanut butter sandos

i wanted to make a fun treat for our friends birthday backyard jam session. i was going back and forth between cookies and cupcakes, and i think the ease of a cookie and the deliciousness of the frosting is what i was wanting. put your hands together... rich and peanut buttery cookie sandwiches were the answer.
chocolate peanut butter cookie sandwiches

chocolate cookies

1 1/4 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

pinch of salt

1/2 cup butter, room temperature

3/4 cup granulated sugar

1/4 cup light brown sugar, packed

1 large egg

1 1/2 teaspoon vanilla extract


  1. cream together butter, sugars, eggs, vanilla.

  2. mix in salt, baking soda, cocoa powder, and flour.

  3. pack into a square of dough, about 6"x6", wrap in clear wrap, and refridgerate for 30 minutes.

  4. once cooled, use a knife to divide your square of dough into 36 pieces. 6 pieces wide x 6 pieces high.

  5. roll each little cube into a ball and lightly press to flatten a bit on your parchment lined cookie sheet.

  6. bake at 350˚ for 8 minutes, then let the cookies rest on the cookie sheet for 5 minutes. remove the cookies from the baking sheet and let them cool completely before adding buttercream.


    i gently squished my cookies with my cast iron press to add the dimpled texture, and solidify the cookie a bit to add strength for holding a sandwich form. not a neccessary step, but to each your own.

peanut butter buttercream

1 cup butter, room temperature

1 cup fresh ground peanut butter

pinch of salt

2 1/2 cups powdered sugar


  1. cream together butter and peanut butter until light and fluffy.

  2. throw in your pinch of salt, and start adding in your powdered sugar 1/2-1 cup at a time.

  3. whip until everything is combined and nice and fluffy.


after your cookies are cooled, build your sandwich by adding a spoonful of peanut buttery goodness between two cookies and pressing together.


i like the more untouched rustic look, but you could always clean up the edges with a clean finger or spatula, and roll in sprinkles for an extra touch.
