while camping along the river in alabama, i used a few old bananas, a dutch oven, some apples, and pieced together this recipe into a new tasty autumnal wintery kind of treat. this literally is a fireside creation, cooked in the camp fire for the very first time. you can bake it in the oven if you don't feel like building a fire, and using hot coals. i understand.


fireside cake recipe
1-2 ripe bananas
1/3 cup melted butter
3/4 cup sugar
1 1/2 cup flour
1 pinch salt
1 tsp baking soda
1 egg
1 1/2 tsp vanilla
1 1/2 tsp cinnamon
2 peeled + chopped apples [about 2 cups]
1/2 cup dried cranberries
1/2 cup [or less] semi-sweet chocolate chips
prepare baking dish by buttering bottom and sides. line bottom with parchment paper.
i love baking this in cast iron, but any baking pan or dish will do.
in a large mixing bowl, combine all of the ingredients, but apples, cranberries, + chocolate chips.
batter may seem somewhat dry, but apples will add plenty of moisture.
now, add apples, cranberries, + chocolate chips. mix until combined well + pour into your baking dish.
bake at 350˚ for 40-55 minutes, or until a toothpick comes out clean.
once done baking, use a thin knife to separate the edge of the cake from the baking dish. this will help the cake to shrink while cooling, and not stick to the edges. let cool for a while before serving. it's pretty yummy while it's warm, though.
serve on it's own or pair with some good ol' vanilla ice cream.
it's perfectly fine with coffee in the morning, too!
