lemon bars

lemon bars are brent's favorite, and they're so tasty i figured it would be good to share with the world. so, here you go world. hope you enjoy them as much as he does, or you find somebody who does.




lemon bar recipe

CRUST

1 cup room temperature butter

1/2 cup granulated sugar

2 cups flour

pinch of salt


FILLING

6 eggs

3 cups sugar

2 tbsp lemon zest

1 cup fresh lemon juice

1 cup flour


TOPPING

powdered sugar for dusting

a littte lemon twist if you're feeling fancy





  1. prepare baking dish by oiling bottom and sides. line bottom with parchment paper.

  2. in a large mixing bowl, combine all of the crust ingredients, until crumble texture.

  3. dump crust crumbly ingredients into baking dish and slightly press into a solid.

  4. bake at 350˚ for 25-30 minutes.

  5. to make filling, completely combine all ingredients in a mixing bowl.

  6. take the crust out of the oven, pour over your lemon filling, and bake for an additional 30-40 minutes, until the center jiggles more like jello and less like liquid.

  7. let cool, and dust with powdered sugar.


    i like to serve the edges together, then the center pieces together, so they match - that's just me, though. also, it may be tempting to eat all of them if they stay on the kitchen counter... they freeze really well.
